Meatless Lent Recipes

Lent doesn’t have to be a scary time of abstinence. There are plenty of family-friendly recipes that don’t require meat. In fact, you may love them so much, you’ll keep preparing them all year round! The Polk County Catholic schools have compiled a list of delicious Lenten meals for you and your child! 

Lentil Burger
The thought of not having a burger might scare you and your child. But there are plenty of plant-based alternatives to making your very own burgers! You won’t miss the beef when you have a patty made from lentils. Packed with a lot of protein, this recipe is quick and easy for you and your child.

Ingredients:

  • 1 cup brown lentils

  • 6 ounces stemless crimini mushrooms

  • ¼ teaspoons smoked paprika

  • 1 garlic clove

  • 2 tablespoons oil

  • 2 tablespoons white miso

  • ¼ cup all-purpose flour

Instructions:

  1. Boil lentils in a large saucepan by pouring four inches of water on the beans and covering with the lid.  Reduce to medium heat, simmer while stirring occasionally, until the lentils are tender. This should take about 10 minutes.

  2. Finely chop the mushrooms and put in a medium bowl. Add the miso, oil, garlic clove, and paprika. 

  3. Add the lentils, which should be roughly two cups cooked. Stir and smash with a spoon until the lentils are just partly mashed.

  4. Stir in the flour until the mixture holds together when rolled.

  5. Form six patties that are ¾-inch thick.

  6. Heat one tablespoon of oil in a large nonstick pan over medium heat. Cook the patties until they become very brown and crisp — about three minutes.

  7. Repeat on the other side.

  8. Load it up with your favorite toppings, sauce it up with condiments, and place between your bun of choice. 

  9. Enjoy!

Personal Pizzas
God is good when we can still eat pizza! Save money and time by making your own at home. This simple recipe for personal pizza pies calls for just a few ingredients: 

  • 2 tubes of buttermilk biscuits

  • 1 can of tomato sauce

  • 1 ½ teaspoons of minced onions

  • 1 teaspoon dried oregano

  • 1 teaspoon of dried basil

  • ⅛ teaspoon of garlic powder

  • 2 cups of shredded cheese of choice

  • Your child’s favorite veggies!

Instructions:

  1. Roll the biscuits into circles that are 2 ½ inches, then place them on a greased baking sheet.

  2. In a small bowl, mix the tomato sauce, oregano, onion, basil, and garlic powder. 

  3. Spread the mixture over the biscuits.

  4. Sprinkle the cheese.

  5. Bake for 10 minutes on 400 degrees until the edges are brown and the cheese is melted.
